Ingredients

  • 2 lbs chicken, beef, or lamb, cut into pieces (or 4 cups mixed vegetables for a vegetarian version)
  • 3 tablespoons curry powder
  • 2 teaspoons turmeric
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 large tomatoes, chopped
  • 2 potatoes, peeled and cubed
  • 2 tablespoons vegetable oil
  • 2 cups water or coconut milk
  • 1 Scotch bonnet pepper, whole (optional, for heat)
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare the Meat and Spices

    Season the meat with salt, pepper, and 1 tablespoon of curry powder. Let it marinate for at least 30 minutes to enhance the flavor.

  2. Cook the Curry Base

    Heat the vegetable oil in a large pot over medium heat. Add the remaining curry powder and turmeric, cooking for 1–2 minutes to release their aroma. Stir in the onion, garlic, and ginger, cooking until the onion is soft and golden.

  3. Add Tomatoes and Meat

    Add the chopped tomatoes and cook until they soften, forming a thick base. Add the marinated meat, stirring to coat it thoroughly with the spice mixture. Brown the meat lightly on all sides.

  4. Simmer

    Add water or coconut milk, the Scotch bonnet pepper (if using), and cubed potatoes. Bring to a boil, then reduce heat and simmer gently for 45–60 minutes, or until the meat is tender and the sauce has thickened. Stir occasionally to prevent sticking.

  5. Serve

    Remove the Scotch bonnet pepper before serving (unless you want extra heat). Garnish with fresh cilantro.
