Githeri (Kenyan Bean and Corn Stew)

Ingredients

  • 2 cups dried kidney beans (or 3 cups cooked/canned beans)
  • 2 cups maize (fresh, frozen, or canned)
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder (optional)
  • 1 teaspoon paprika or chili powder (optional)
  • Salt and pepper to taste
  • 4 cups water or vegetable broth
  • Fresh coriander (cilantro) for garnish

Instructions

  1. Prepare the Beans and Maize

    If using dried beans, soak them overnight, then boil until tender. If using canned beans, rinse and drain. Boil the maize until tender if using fresh or frozen.

  2. Sauté the Aromatics

    Heat vegetable oil in a large pot over medium heat. Add chopped onions and garlic, sautéing until soft and fragrant. Stir in chopped tomatoes and cook until they soften into a sauce.

  3. Combine Ingredients

    Add the cooked beans and maize to the pot. Stir well to combine. Pour in water or vegetable broth, and season with salt, pepper, curry powder, and paprika or chili powder if using.

  4. Simmer

    Cover the pot and let the mixture simmer over low heat for 20–30 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.

  5. Serve

    Garnish with fresh coriander before serving. Enjoy Githeri hot as a main dish or a side.
