Mititei (Romanian Grilled Sausages)

Ingredients

  • 1/2 lb (250 g) ground beef
  • 1/2 lb (250 g) ground lamb
  • 1/4 lb (125 g) ground pork
  • 4 cloves garlic, finely minced
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon coriander
  • 1/4 teaspoon allspice
  • 1/2 cup sparkling water (or mineral water)
  • Vegetable oil for brushing

Instructions

  1. Prepare the Meat Mixture

    In a large bowl, combine the ground beef, lamb, and pork. Add minced garlic, baking soda, salt, pepper, thyme, paprika, coriander, and allspice. Gradually mix in sparkling water to create a smooth, sticky texture. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

  2. Shape the Mititei

    Wet your hands with a little water and shape the meat mixture into small, finger-sized sausages, about 3-4 inches long. Place them on a tray lined with parchment paper.

  3. Grill the Sausages

    Preheat your grill or barbecue to medium-high heat. Lightly brush the sausages with vegetable oil. Grill the Mititei for 8-10 minutes on each side, turning carefully, until they are browned and cooked through.

  4. Serve
