1/2 lb (0.22 kg) kefalotyri or hard cheese, grated
3 eggs, beaten
1/4 cup (30 g) fresh mint, finely chopped
1/2 tsp (2.5 g) ground cinnamon (optional)
1/4 cup (30 g) raisins (optional)
Instructions
Prepare the Dough:
In a large bowl, mix the flour, mahlep, mastic, and salt. Dissolve the yeast and sugar in the warm milk and let it sit for about 10 minutes until foamy. Add the yeast mixture, olive oil, and beaten eggs to the flour mixture, and knead until a smooth dough forms. Cover and let the dough rise for 1-2 hours in a warm place.
Make the Filling:
In another bowl, combine the grated halloumi and kefalotyri cheeses. Stir in the beaten eggs, mint, and optional ingredients like cinnamon or raisins. Mix well and set aside.
Assemble the Flaounes:
Preheat the oven to 350°F (175°C). Once the dough has risen, roll it out on a floured surface to about 1/4-inch thick. Cut into circles or squares (about 5-6 inches in diameter). Place a heaping spoonful of the cheese mixture in the center of each piece of dough. Fold the edges over to form a triangle or square, leaving some of the filling exposed in the center.
Top and Bake:
