Ingredients
2 lb (0.9 kg) lamb shoulder, cut into chunks
2 large onions, sliced
4 cloves garlic, minced
2 large tomatoes, chopped
1/2 cup (115 g) uncooked rice
1/4 cup (60 ml) olive oil
1 tsp (5 g) ground cinnamon
1 tsp (5 g) ground cumin
1 tsp (5 g) ground coriander
1/2 tsp (2.5 g) black pepper
1 tsp (5 g) salt
1 cup (240 ml) water
Fresh parsley, for garnish
Instructions
Prepare the Meat and Vegetables: Preheat the oven to 350°F (175°C). In a large bowl, combine the lamb chunks, sliced onions, garlic, chopped tomatoes, olive oil, cinnamon, cumin, coriander, salt, and pepper. Mix well to coat the lamb with the spices.
Assemble in a Clay Pot or Casserole Dish: Transfer the lamb mixture into a clay pot or a heavy casserole dish. Add the uncooked rice and pour the water over the mixture.
Cover and Cook: Cover the pot with a lid or foil. Place in the preheated oven and cook for about 2 to 2.5 hours, or until the lamb is tender and the flavors have melded together. Stir occasionally, and if the dish looks dry, add a little more water.
Garnish and Serve: Once cooked, remove from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
