Instructions
Marinate the Beef:
In a large bowl, combine the beef sirloin with onions, carrots, celery, garlic, red wine, olive oil, Dijon mustard, thyme, rosemary, bay leaf, salt, and pepper. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.
Sear and Cook the Beef:
