Egusi Soup (West African Melon Seed Soup)

Ingredients

  • 1 cup ground egusi (melon seeds)
  • 1/2 cup palm oil
  • 1 onion, finely chopped

  • 2 cups meat or fish (chicken, beef, goat, or smoked fish), cooked and cut into pieces
  • 2 cups leafy greens (spinach, bitter leaf, or kale), chopped
  • 2 tablespoons ground crayfish (optional)
  • 4 cups water or stock
  • Salt to taste
  • Seasoning cubes or powder (optional)

Instructions

  1. Prepare the Egusi Paste

    In a bowl, mix the ground egusi with a little water to form a thick paste. Set aside.

  2. Heat the Palm Oil

    In a large pot, heat the palm oil over medium heat until it melts and becomes fragrant. Add chopped onions and garlic, and sauté until translucent.

  3. Cook the Egusi

    Add the egusi paste to the pot, stirring constantly. Fry for about 5-10 minutes, allowing the paste to release its nutty aroma and slightly brown.
