Coca

Coca is a traditional Catalan flatbread enjoyed in Spain and Andorra. It can be savory or sweet, often topped with vegetables, meats, or sugar and nuts. Similar to pizza but with a distinct Mediterranean touch, Coca is a versatile dish perfect for any occasion. Whether you prefer a crispy, thin base or a slightly thicker, bread-like texture, this easy-to-make recipe brings the flavors of Catalonia to your kitchen.

Ingredients

Dough:

  • 3 cups (400g) all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp (10g) sugar
  • 2 tsp (7g) dry yeast
  • 1/2 cup (120ml) warm water
  • 1/4 cup (60ml) olive oil

Toppings (for a classic savory Coca):

  • 1 large tomato, sliced
  • 1/2 red bell pepper, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 1/4 cup (30g) black olives, pitted and sliced
  • 2 tbsp (30ml) olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp salt

Instructions

  1. Prepare the Dough

In a bowl, mix the flour, salt, and sugar. Dissolve the yeast in warm water and let it sit for 5 minutes. Add the yeast mixture and olive oil to the flour and knead until smooth. Cover and let it rise for 1 hour.

  2. Preheat and Roll

Preheat the oven to 400°F (200°C). Roll out the dough into a thin rectangle or oval shape and place it on a baking sheet.

  3. Add the Toppings

Brush the dough with olive oil and arrange the tomato, bell peppers, and olives on top. Sprinkle with oregano and salt.

  4. Bake

Bake for 20-25 minutes, until the edges are golden brown and crispy.

  5. Serve

Let it cool slightly before slicing and serving.
