- 1 whole fish (snapper, tuna, or mackerel), cleaned and scaled
- 2 tablespoons coconut oil or vegetable oil
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon curry powder
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 teaspoon salt (or to taste)
- Juice of 1 lime
- Optional: chopped curry leaves for garnish

Prepare the Fish
Clean the fish thoroughly and pat dry with a paper towel. Make diagonal slits on both sides of the fish to help the spices penetrate.

Make the Spice Paste
In a small bowl, combine turmeric, chili powder, curry powder, garlic paste, ginger paste, salt, and lime juice to form a smooth paste. Rub the spice paste generously over the entire fish, including inside the slits and cavity. Let it marinate for at least 30 minutes (or up to 2 hours for more intense flavor).

Preheat a grill or barbecue to medium-high heat. Brush with coconut or vegetable oil to prevent sticking. Place the marinated fish on the grill and cook for 6–8 minutes on each side, or until the fish is cooked through and slightly charred. The flesh should be opaque and flake easily with a fork.
