Chotlho is a traditional Botswana dish featuring slow-cooked beef or goat meat, seasoned with simple ingredients to highlight its natural flavors. Ingredients:

For Chotlho:

2 lbs (1 kg) beef or goat meat, cut into large chunks

1 large onion, chopped

2 cups (500 ml) water

1 teaspoon (5 g) salt

1 teaspoon (2 g) black pepper

Optional: 2 garlic cloves, minced

Instructions:

Prepare the Meat: Rinse the meat thoroughly and pat it dry with paper towels.

Cook the Meat: Place the meat in a large pot and add water. Bring to a boil over medium-high heat.

Add Seasonings: Reduce the heat to low and add the chopped onion, salt, black pepper, and garlic (if using). Stir well.

Simmer: Cover the pot and let the meat simmer for 1.5 to 2 hours, stirring occasionally. Add more water if needed to prevent the meat from sticking.

Finish Cooking: Once the meat is tender and the water has reduced to form a rich broth, remove it from the heat.

Serving: Chotlho is traditionally served with Bogobe (porridge made from sorghum or maize meal) or rice. It can also be paired with steamed vegetables or a side salad for a complete meal. This recipe serves 4–6 people.
