1 lb (0.45 kg) Fresh Fish Fillets, cubed

1 Onion, finely chopped

2 Tomatoes, diced

2 Carrots, sliced

2 Potatoes, peeled and diced

1 cup (200g) Green Beans, chopped

2 cloves Garlic, minced

1 tsp Fresh Ginger, grated

1/4 cup Coconut Cream

4 cups (960ml) Fish or Vegetable Broth

Salt and Pepper to taste

Fresh Coriander (Cilantro) for garnish

In a large pot, sauté chopped onion, minced garlic, and grated ginger until aromatic. Add diced tomatoes and cook until softened. Pour in fish or vegetable broth and bring the mixture to a simmer. Add carrots, potatoes, and green beans to the pot. Cook until the vegetables are tender. Gently place the cubed fish into the soup, allowing it to cook through. Stir in coconut cream for a rich and creamy texture. Season the soup with salt and pepper to taste. Garnish with fresh coriander (cilantro) before serving.

Serve the Fish Soup hot, allowing the flavors to meld together. Pair with a side of crusty bread for a complete Nauruan dining experience.
