Prepare the Filling
In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Sauté the chopped onion and garlic until soft and fragrant. Add the shredded chicken, cumin, chili powder, salt, and pepper. Stir to combine and cook for 2–3 minutes. Remove from heat.

Preheat your oven to 375°F (190°C). Lightly grease a baking dish. Warm the tortillas slightly to make them pliable. Spoon a portion of the filling into each tortilla, sprinkle with some shredded cheese, then roll tightly and place seam-side down in the prepared baking dish.

Pour the enchilada sauce evenly over the rolled tortillas, making sure each one is well covered. Sprinkle the remaining cheese on top.
