Ingredients

  • 2 cups rice flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups coconut milk
  • 2 large eggs
  • 1/4 cup melted butter
  • Banana leaves (optional, for lining)
  • 1/2 cup shredded coconut (for topping)
  • 2 salted duck eggs, sliced (optional)
  • Additional butter for greasing

Instructions

  1. Prepare the Batter

In a large mixing bowl, combine rice flour, sugar, baking powder, and salt. In a separate bowl, whisk together coconut milk, eggs, and melted butter. Gradually pour the wet ingredients into the dry ingredients, stirring until smooth and well combined.

  2. Prepare the Pan

Preheat your oven to 375°F (190°C). Grease a round baking pan or line it with banana leaves for a traditional touch. Pour the batter into the prepared pan, spreading evenly.

  3. Add Toppings

Arrange slices of salted egg on top of the batter, then sprinkle with shredded coconut. Dot with small pieces of butter for extra richness.

  4. Bake the Bibingka

Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.

  5. Serve

Remove from the oven and let cool slightly. Serve warm, garnished with extra coconut or a pat of butter if desired.
