Chelo Kebab (Persian Saffron Rice with Kebab)

Ingredients
For the Kebab:
- 1 lb (450 g) ground lamb or beef
- 1 medium onion, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon turmeric (optional)
- 1/4 teaspoon saffron threads, dissolved in 1 tablespoon hot water
For the Rice (Chelo):
- 2 cups basmati rice
- 4 cups water
- 1 teaspoon salt
- 2 tablespoons butter or ghee
- A pinch of saffron threads, dissolved in 2 tablespoons hot water
To Serve:
- Grilled tomatoes
- Fresh herbs (parsley, mint, basil)
- Sumac powder (optional)

Prepare the Kebab
In a large bowl, combine ground meat, grated onion, salt, pepper, turmeric, and saffron water. Mix thoroughly until smooth. Divide the mixture into equal portions and shape onto skewers, pressing firmly to hold the meat.

Grill the Kebab
Preheat a grill or broiler to medium-high heat. Grill the kebabs for 4–6 minutes per side, until nicely browned and cooked through. Baste occasionally with melted butter if desired.

Cook the Rice
Rinse the basmati rice under cold water until the water runs clear. Bring 4 cups of water and 1 teaspoon salt to a boil in a large pot. Add the rice and cook for 6–8 minutes until slightly tender but still firm. Drain the rice.
In the same pot, melt butter and layer the rice over it. Drizzle with saffron water. Cover and steam on low heat for 20–25 minutes until fluffy.

Plate the saffron rice and place the kebabs on top or alongside. Garnish with grilled tomatoes, fresh herbs, and a sprinkle of sumac if desired.
