Ghormeh Sabzi (Persian Herb Stew)

Ingredients

  • 1 lb (450 g) beef or lamb, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 1 cup dried kidney beans (or 1 can, drained and rinsed)
  • 1 cup fresh parsley, finely chopped
  • 1 cup fresh cilantro, finely chopped
  • 1 cup fresh chives or green onions, finely chopped
  • 1 cup fresh fenugreek leaves (or 2 tablespoons dried)
  • 4 tablespoons vegetable oil
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 1–2 teaspoons salt (to taste)
  • 3–4 dried limes (or 2 tablespoons lime juice)
  • 4 cups water or beef broth

Instructions

  1. Prepare the Herbs

    Wash and finely chop all the fresh herbs. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat, and sauté the herbs for 5–7 minutes until fragrant. Set aside.

  2. Cook the Meat

    In a large pot, heat the remaining oil over medium heat. Add the chopped onion and sauté until golden. Stir in the turmeric and meat, browning the cubes on all sides.

  3. Simmer the Stew

    Add the sautéed herbs, kidney beans, dried limes (pierce each lime a few times with a fork), salt, pepper, and water or broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 2–3 hours, or until the meat is tender and the flavors are well blended. If using canned beans, add them in the last 30 minutes of cooking.

  4. Adjust the Flavor

    Taste and adjust seasoning with additional salt, pepper, or lime juice as needed.

  5. Serve

    Serve Ghormeh Sabzi hot over steamed basmati rice, with extra herbs or lime wedges on the side.
