Discover the comforting taste of Lithuania with Kugelis, a hearty potato pudding that blends grated potatoes, onions, bacon, and eggs into a golden, baked delight. Perfect as a main dish or a side, Kugelis offers a warm, rustic flavor that brings the essence of Lithuanian home cooking to your table.

Ingredients

  • 2 pounds (about 1 kg) potatoes, peeled and grated
  • 1 large onion, finely chopped
  • 6 slices bacon, diced
  • 4 eggs
  • 1 cup milk
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons butter, for greasing the baking dish
  • Optional: sour cream, for serving

Instructions

  1. Prepare the Ingredients

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter. In a skillet, cook the diced bacon over medium heat until crisp. Remove and set aside, leaving some bacon fat in the skillet. Sauté the chopped onion in the bacon fat until translucent.

  2. Mix the Potato Pudding

In a large bowl, combine the grated potatoes, sautéed onion, cooked bacon, eggs, milk, flour, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.

  3. Bake

Pour the mixture into the prepared baking dish and spread it evenly. Bake in the preheated oven for 1 to 1.5 hours, or until the top is golden brown and a knife inserted in the center comes out clean.

  4. Serve

Allow the Kugelis to cool slightly before slicing. Serve warm, optionally with a dollop of sour cream on top.
