Chicken Biryani

Experience the aromatic and flavorful world of Indian cuisine with Chicken Biryani, a classic dish that combines tender chicken, fragrant basmati rice, and a rich blend of spices. Ingredients

  • 2 cups basmati rice
  • 500 g chicken, cut into pieces
  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 3 tablespoons yogurt
  • 2 tablespoons ginger-garlic paste
  • 1/4 cup cooking oil or ghee
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 1-2 cinnamon sticks
  • 2 bay leaves
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh mint leaves, chopped
  • Salt to taste
  • 4 cups water

Instructions

  1. Prepare the Chicken Marinade

    In a bowl, combine chicken pieces with yogurt, turmeric, red chili powder, garam masala, and half of the ginger-garlic paste. Mix well and marinate for at least 30 minutes, or up to 2 hours for deeper flavor.

  2. Cook the Rice

    Rinse the basmati rice under cold water until the water runs clear. In a large pot, bring 4 cups of water to a boil with a pinch of salt. Add the rice and cook until 70% done. Drain and set aside.

  3. Prepare the Chicken and Onions

    Heat oil or ghee in a large, heavy-bottomed pan. Add cumin seeds, cardamom, cloves, cinnamon sticks, and bay leaves. Sauté for 1-2 minutes until fragrant. Add sliced onions and cook until golden brown. Add the remaining ginger-garlic paste and chopped tomatoes. Cook until the tomatoes soften.

  4. Cook the Chicken

    Add the marinated chicken to the pan and cook on medium heat until the chicken is nearly cooked and the oil begins to separate from the masala. Add chopped cilantro and mint leaves, stirring gently.

  5. Layer the Biryani

    In the same pan, spread half of the partially cooked rice over the chicken mixture. Sprinkle some garam masala, cilantro, and mint leaves. Layer the remaining rice on top and repeat the garnish. Cover the pan tightly with a lid.

  6. Steam Cook (Dum)

    Cook on very low heat for 20-25 minutes to allow the flavors to meld. Alternatively, place a heavy pan underneath for indirect heat to prevent burning.

  7. Serve

    Gently fluff the biryani before serving. Serve hot with raita, salad, or boiled eggs for a complete meal.
