Moqueca (Brazilian Fish Stew)

Ingredients

  • 2 lbs firm white fish fillets (such as cod, snapper, or halibut), cut into chunks
  • 1 lime, juiced

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 2 medium tomatoes, chopped

  • 1 can (14 oz) coconut milk
  • 1/2 cup fish or vegetable stock
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional, for heat)

Instructions

  1. Marinate the Fish

    Season the fish chunks with lime juice, salt, and pepper. Let them marinate for 15–20 minutes while you prepare the vegetables.

  2. Sauté the Vegetables

    Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add the onions, bell peppers, and garlic, and sauté until the vegetables are soft and fragrant, about 5–7 minutes.

  3. Build the Stew

    Add the chopped tomatoes, cilantro, paprika, and cayenne pepper to the pan. Cook for another 3–4 minutes until the tomatoes start to break down. Pour in the coconut milk and fish stock, stirring gently to combine. Bring to a simmer.

  4. Cook the Fish

    Carefully add the marinated fish chunks to the simmering stew. Cover and cook for 10–15 minutes, or until the fish is cooked through and flakes easily with a fork. Adjust seasoning with salt and pepper.
