Bunny Chow (South African Street Food)

Ingredients

  • 1 loaf of white bread (unsliced, medium-sized)
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, chopped (optional for heat)
  • 1 pound chicken, lamb, or beef, cut into bite-sized pieces (or use vegetables for a vegetarian version)
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1 can (14 oz) chopped tomatoes
  • 1 cup chicken or vegetable stock
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the Curry

    Heat vegetable oil in a large skillet over medium heat. Add onions and sauté until soft and translucent. Add garlic, ginger, and green chili; cook for 1-2 minutes until fragrant. Stir in curry powder, cumin, coriander, turmeric, and chili powder; cook for another minute to release the spices’ aroma. Add the meat or vegetables and cook until browned on all sides. Pour in chopped tomatoes and stock, season with salt and pepper. Simmer over low heat for 25–30 minutes (longer for meat) until the curry thickens and the flavors meld.

  2. Prepare the Bread

    Cut the loaf of bread into quarters or halves, depending on size. Hollow out the center of each piece, leaving a thick shell of bread around the edges to hold the curry.

  3. Assemble the Bunny Chow

    Spoon the hot curry into the hollowed-out bread. Garnish with fresh cilantro. Serve immediately, using the scooped-out bread pieces to mop up the curry.
