American Apple Pie

- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
- 1 tablespoon sugar (for sprinkling on top)

Prepare the Pie Crust
In a large bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.

Prepare the Apple Filling
In a large bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, allspice, flour, and lemon juice. Make sure the apples are evenly coated.

Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie pan. Place the dough in the pan and trim excess edges. Pour the apple filling into the crust. Roll out the second disk of dough and place it over the apples. Trim, fold, and crimp the edges to seal. Cut small slits in the top crust to allow steam to escape.
