Pancit (Filipino Noodle Dish)

Ingredients

  • 8 oz rice noodles (bihon)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 cup sliced chicken breast or pork
  • 1/2 cup shrimp, peeled and deveined
  • 2 cups cabbage, shredded
  • 1 carrot, julienned
  • 1/2 cup green beans, cut into 2-inch pieces
  • 3 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • Salt and pepper to taste
  • 2 green onions, sliced
  • Lemon or calamansi, for serving

Instructions

  1. Prepare the Ingredients

    Soak the rice noodles in warm water for 10–15 minutes until soft, then drain. Prepare all vegetables and proteins.

  2. Cook the Proteins

    Heat vegetable oil in a large pan or wok over medium heat. Sauté garlic and onion until fragrant. Add chicken and cook until lightly browned. Add shrimp and cook until pink and just done. Remove proteins from the pan and set aside.

  3. Cook the Vegetables

    In the same pan, sauté carrots, green beans, and cabbage until slightly tender.

  4. Combine Noodles and Sauce

    Add the softened noodles to the pan. Pour in chicken broth, soy sauce, and oyster sauce. Toss gently to combine, allowing the noodles to absorb the flavors.

  5. Add Proteins and Finish

    Return the cooked chicken and shrimp to the pan. Season with salt and pepper to taste. Stir in sliced green onions and cook for another 2–3 minutes until everything is heated through.

  6. Serve

    Transfer Pancit to a serving platter and serve with lemon or calamansi wedges on the side for a fresh, tangy kick.
