Spanakopita

Ingredients
- 1 lb (0.45 kg) fresh spinach, chopped
- 8 oz (225 g) feta cheese, crumbled
- 1 onion, finely chopped
- 2 cloves garlic, minced

- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 package phyllo dough, thawed if frozen
- 1/2 cup melted butter or olive oil for brushing

Preheat Oven
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.

Sauté Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened. Add the chopped spinach to the skillet and cook until wilted, about 3–5 minutes. Remove from heat and let cool.

In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, chopped dill, chopped parsley, salt, and pepper. Mix well to combine.

Layer Phyllo Dough
Unroll the phyllo dough sheets and cover them with a damp towel to prevent drying out. Place one sheet of phyllo dough in the prepared baking dish and brush it lightly with melted butter or olive oil. Repeat with several more sheets, layering them and brushing each with butter or oil.
