3 cups (600g) basmati rice, soaked and drained

1 cup (200g) yogurt

4 large onions, thinly sliced

1/2 cup (120ml) cooking oil or ghee

2 tomatoes, chopped

1/4 cup (60g) ginger-garlic paste

1 cup (250ml) chicken broth

1/2 cup (125ml) milk

1/2 cup (75g) fried onions (for garnish)

Fresh coriander and mint leaves for garnish


Marinate the chicken in yogurt, ginger-garlic paste, and spices for at least 2 hours. In a large pot, sauté sliced onions until golden brown, set half aside for later. Add marinated chicken to the pot, cook until the oil separates. Layer half of the soaked rice over the chicken, followed by chopped tomatoes and fried onions. Repeat the layering process with the remaining rice. Pour chicken broth and milk over the layers. Cover and cook on low heat until the rice is tender and aromatic. Garnish with fried onions, fresh coriander, and mint leaves.
