Bein Mont (Burmese Layered Pancake)

Ingredients

  • 1 cup rice flour
  • 1/4 cup glutinous rice flour
  • 1 cup coconut milk
  • 1/2 cup grated coconut (fresh or desiccated)
  • 1/2 cup jaggery (or dark brown sugar), finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon turmeric powder (optional, for color)
  • 2 tablespoons vegetable oil (plus extra for greasing the pan)
  • 1 tablespoon sesame seeds (toasted, for garnish)
  • 2 tablespoons sliced coconut or peanuts (optional, for topping)

Instructions

  1. Prepare the Batter

    In a mixing bowl, combine rice flour, glutinous rice flour, and salt. Gradually whisk in coconut milk until you have a smooth, slightly thick batter. Add turmeric if desired for a warm golden color. Let the batter rest for 10–15 minutes.

  2. Prepare the Jaggery Syrup

    In a small saucepan, melt jaggery with 2 tablespoons of water over low heat until it forms a syrup. Strain to remove impurities, then stir it into the batter. Add grated coconut and mix well.

  3. Cook the Bein Mont

    Heat a non-stick skillet or small frying pan over medium-low heat and brush lightly with oil. Pour in a ladleful of batter (about 1/4 inch thick). Cover and cook for 3–4 minutes until bubbles form and the edges begin to crisp.

  4. Flip and Finish

    Flip carefully and cook the other side for another 2–3 minutes until golden brown and cooked through. Repeat with the remaining batter, brushing the pan with oil each time.

  5. Garnish and Serve

    While still warm, sprinkle toasted sesame seeds and sliced coconut or peanuts over the top. Slice into wedges and serve.
