Bariis (Somali Rice)
Bariis is a fragrant Somali rice dish infused with aromatic spices and often served with tender meat or vegetables. This flavorful and colorful dish is perfect for family gatherings or special occasions, offering a taste of Somali culinary tradition.
Ingredients
- 2 cups basmati rice
- 3 tablespoons vegetable oil or ghee
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon turmeric
- 1/4 teaspoon ground black pepper
- 1 teaspoon salt (adjust to taste)
- 3 cups chicken or vegetable broth
- 1/4 cup raisins (optional)
- 1/4 cup slivered almonds or cashews, toasted (optional)
- Fresh cilantro for garnish

Prepare the Spices and Aromatics
Heat the oil or ghee in a large pot over medium heat. Add the chopped onion and sauté until soft and golden, about 5–7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Add the Spices
Sprinkle in the cumin, coriander, cardamom, cinnamon, cloves, turmeric, black pepper, and salt. Stir continuously for about 1–2 minutes to toast the spices and release their aroma.

Cook the Rice
Add the basmati rice to the pot and stir well to coat each grain with the spiced onion mixture. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15–20 minutes, or until the rice is tender and the liquid is absorbed.

If using, fold in raisins and toasted nuts. Cover the pot again and let it sit for 5 minutes to allow the flavors to meld.
