Banh Mi (Vietnamese Sandwich)

Ingredients

  • 1 French baguette (crispy crust, soft inside)
  • 1/2 pound pork tenderloin or chicken breast, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 garlic clove, minced
  • 1 tablespoon vegetable oil
  • 1/2 cup mayonnaise
  • 1 teaspoon sriracha (optional, for spicy mayo)
  • 1/2 cup pickled carrots and daikon (see below)
  • 1/2 cucumber, thinly sliced lengthwise
  • Fresh cilantro sprigs
  • Fresh chili slices (optional)
  • Salt and pepper to taste
Quick Pickled Carrots and Daikon
  • 1/2 cup shredded carrots
  • 1/2 cup shredded daikon radish
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1/2 teaspoon salt

Instructions

  1. Make the Pickles

    In a small bowl, combine vinegar, water, sugar, and salt. Stir until sugar dissolves. Add shredded carrots and daikon. Let sit for at least 30 minutes (or up to overnight in the refrigerator).

  2. Prepare the Meat

    In a bowl, mix soy sauce, fish sauce, sugar, minced garlic, and a pinch of pepper. Add the sliced pork or chicken and marinate for 20–30 minutes.

    Heat oil in a skillet over medium heat. Cook the meat until golden brown and fully cooked, about 5–7 minutes. Set aside.

  3. Prepare the Baguette

    Slice the baguette lengthwise, leaving one side connected to form a hinge. Lightly toast it until crisp on the outside.

  4. Assemble the Sandwich

    Mix mayonnaise and sriracha (if using). Spread it evenly on both sides of the baguette. Layer with cooked meat, drained pickled vegetables, cucumber slices, cilantro, and fresh chili (if desired).

  5. Serve

    Serve the Banh Mi immediately while the bread is still warm and crispy.
