Pho (Vietnamese Noodle Soup)

Ingredients
- 1 lb beef bones (or chicken bones)
- 8 cups water
- 1 large onion, halved
- 4-inch piece of ginger, sliced in half lengthwise
- 4 star anise
- 3 cloves
- 1 cinnamon stick
- 1 tablespoon coriander seeds
- 1 tablespoon fish sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 8 oz rice noodles
- 1/2 lb thinly sliced beef (such as sirloin or brisket)
- Fresh herbs: cilantro, Thai basil, and mint
- Bean sprouts
- Lime wedges
- Sliced chili peppers
- Hoisin sauce and Sriracha (optional)

Prepare the Broth
In a large pot, add the bones and cover with water. Bring to a boil and then reduce to a simmer. Skim off any foam that rises to the surface.
Char the onion and ginger over an open flame or in a dry skillet until slightly blackened, then add to the pot.
Toast star anise, cloves, cinnamon stick, and coriander seeds in a dry pan for a few minutes to release their aroma, then add to the pot.
Simmer the broth gently for 3–4 hours, adding water as needed to maintain volume. Strain the broth, discarding solids. Season with fish sauce, salt, and sugar.

Prepare the Noodles and Beef
Cook rice noodles according to package instructions, then drain and set aside.
Arrange thinly sliced beef on a plate. The slices should be very thin so they cook quickly in the hot broth.

Assemble the Pho
Divide noodles into serving bowls.
Arrange raw beef slices on top of the noodles.
Pour hot broth over the beef, allowing it to cook instantly.

Serve with fresh herbs, bean sprouts, lime wedges, sliced chili, hoisin sauce, and Sriracha on the side.
