Bakes and Saltfish (Caribbean Breakfast Classic)

Ingredients

For the Bakes:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar

  • 1/2 lb salted codfish (soaked overnight and drained)

  • 1 bell pepper, chopped

  • 1/4 teaspoon black pepper
  • 2 sprigs fresh thyme

Instructions

  1. Prepare the Saltfish

    Boil the soaked saltfish in water for 15 minutes, then drain and flake the fish, removing bones and skin. Heat oil in a skillet over medium heat. Sauté onion, garlic, bell pepper, and tomato until softened. Add flaked saltfish, black pepper, and thyme. Cook for 5–7 minutes, stirring occasionally. Set aside.

  2. Make the Bakes

    In a large bowl, combine flour, baking powder, salt, and sugar. Rub in the butter until the mixture resembles coarse crumbs. Gradually add water and knead into a soft, smooth dough. Let rest for 10 minutes. Divide the dough into small balls and roll each into a flat circle, about 1/4 inch thick.

  3. Fry the Bakes

    Heat oil in a frying pan over medium heat. Fry the bakes until golden brown on both sides, about 2–3 minutes per side. Drain on paper towels.

  4. Serve
