Ash Reshteh (Persian Noodle Soup)

Ingredients

  • 1 cup chickpeas, soaked overnight
  • 1 cup lentils
  • 1 cup kidney beans, soaked overnight
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh dill, chopped
  • 1/2 cup fresh spinach, chopped
  • 200 g reshteh (Persian noodles) or linguine as a substitute
  • 1/4 cup dried mint
  • 1/4 cup kashk (fermented whey) or Greek yogurt
  • 1 teaspoon turmeric
  • 4 tablespoons vegetable oil
  • Salt and pepper to taste
  • 8 cups water or vegetable broth

Instructions

  1. Prepare the Beans

    Drain the soaked chickpeas and kidney beans. In a large pot, add the beans and lentils with water or broth. Bring to a boil, then reduce to a simmer and cook until tender (about 1–1.5 hours).

  2. Cook the Aromatics

    In a separate pan, heat vegetable oil over medium heat. Sauté chopped onions until golden brown. Add garlic and turmeric, cooking for another minute until fragrant.

  3. Combine Ingredients

    Add the sautéed onions, garlic, and herbs (parsley, cilantro, dill, spinach) to the cooked beans. Stir well and simmer for 20–30 minutes to blend flavors.

  4. Add Noodles

    Break the reshteh noodles into smaller pieces and add them to the soup. Cook until the noodles are tender, about 10–15 minutes. Season with salt and pepper to taste.

  5. Prepare the Garnish

    In a small pan, lightly fry dried mint in a little oil until fragrant. Set aside.

  6. Serve

    Ladle the Ash Reshteh into bowls. Drizzle with kashk and sprinkle with fried mint. Serve hot for a comforting and nourishing meal.
