Arroz de Pato (Portuguese Duck Rice)

Experience the authentic flavors of Portuguese cuisine with Arroz de Pato, a traditional duck rice dish that combines tender, shredded duck with savory chouriço, aromatic herbs, and perfectly baked rice. Ingredients

  • 1 whole duck (about 4 lbs)
  • 1 onion, quartered
  • 2 bay leaves
  • 2 cloves garlic, crushed
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • Salt and pepper to taste
  • 2 cups long-grain rice
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 Portuguese chouriço (or Spanish chorizo), sliced
  • 1 cup white wine
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Duck

    Place the duck in a large pot and cover with water. Add the quartered onion, bay leaves, garlic, carrot, celery, and salt. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until the duck is tender and the meat easily separates from the bone.

  2. Prepare the Broth and Shred the Duck

    Remove the duck and strain the broth, reserving it for cooking the rice. When cool enough to handle, shred the duck meat, discarding the skin and bones. Set aside.

  3. Make the Rice Base

    In a large ovenproof pan, heat olive oil over medium heat. Add the chopped onion and sauté until soft and translucent. Stir in the rice and cook for a few minutes, allowing it to absorb the flavors. Add the white wine and let it reduce slightly.

  4. Combine Ingredients

    Pour in about 4 cups of the reserved duck broth. Add the shredded duck and season with salt and pepper. Mix well and bring to a gentle simmer.

  5. Bake

    Top the mixture evenly with the sliced chouriço. Transfer the pan to a preheated oven at 375°F (190°C) and bake for about 20–25 minutes, until the rice is fully cooked and slightly crispy on top.

  6. Serve

    Remove from the oven, sprinkle with chopped parsley, and serve hot.
