This comforting and nutrient-rich dish is a staple in West African households, served with rice, fufu, or other starchy sides. Its simplicity and depth of flavor make it a must-try recipe for anyone seeking an authentic taste of Togo.

Ingredients

For Gboma Dessi:
  • 1 lb (0.45 kg) fresh spinach or frozen spinach, thawed
  • 1 lb (0.45 kg) beef or lamb, cut into bite-sized pieces
  • 1 medium onion, chopped (0.25 lb / 0.11 kg)
  • 2 medium tomatoes, chopped (0.5 lb / 0.22 kg)
  • 0.5 cup (0.12 liter) palm oil
  • 1 tablespoon ground crayfish (optional)
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground chili pepper (optional, for heat)
  • 2 stock cubes (bouillon)
  • Salt to taste
  • 3 cups (0.7 liter) water

Instructions

  1. Step 1: Prepare the Meat

In a pot, boil the beef or lamb with half of the chopped onions, stock cubes, and a pinch of salt. Simmer until the meat is tender. Reserve the stock for later use.

  2. Step 2: Cook the Spinach

If using fresh spinach, wash and chop it finely. If using frozen spinach, squeeze out excess water. Optionally, blanch the spinach in boiling water for 1-2 minutes, then drain and set aside.

  3. Step 3: Prepare the Stew

In a large pot, heat the palm oil over medium heat. Sauté the remaining onions until soft and translucent. Stir in the garlic, ginger, and chili pepper (if using). Add the chopped tomatoes and tomato paste and cook for about 5 minutes until the mixture thickens.

  4. Step 4: Incorporate the Meat and Stock

Add the cooked meat along with the reserved stock. Simmer for 10 minutes to allow the flavors to blend.

  5. Step 5: Add the Spinach

Stir in the spinach and ground crayfish (if using). Cook for an additional 5-7 minutes, stirring occasionally. Adjust seasoning with salt.
