Amiwo (Beninese Cornmeal Pudding)

Amiwo is a flavorful and comforting dish from Benin, made from cornmeal cooked with tomatoes, spices, and vegetables. This vibrant and savory pudding is perfect as a side dish or main meal, offering a taste of West African cuisine that is both hearty and satisfying.

Ingredients

  • 2 cups cornmeal (fine or medium)
  • 3 cups water
  • 2 tablespoons palm oil (or vegetable oil)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, chopped
  • 1 red bell pepper, chopped
  • 1 scotch bonnet or chili pepper, minced (optional, adjust to taste)
  • 1 teaspoon ground crayfish (optional)
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • Salt to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Prepare the Sauce

    In a large skillet, heat the palm oil over medium heat. Add the chopped onion, garlic, and bell pepper, sautéing until softened and fragrant. Stir in the tomatoes, scotch bonnet, smoked paprika, thyme, and ground crayfish. Cook for 5–7 minutes, allowing the flavors to meld. Season with salt to taste.

  2. Cook the Cornmeal

    Bring the water to a boil in a separate pot. Gradually whisk in the cornmeal to avoid lumps. Reduce heat to low and cook, stirring frequently, until the mixture thickens into a smooth, pudding-like consistency, about 10–15 minutes.

  3. Combine and Simmer

    Add the cooked tomato and pepper sauce to the cornmeal, mixing thoroughly to combine. Cover and simmer over low heat for another 5–10 minutes, allowing the flavors to fully infuse.

  4. Serve

    Spoon the Amiwo onto plates or into bowls while warm. Garnish with fresh parsley or basil for a touch of color and freshness.
