Ingredients
- 1 whole free-range chicken (approximately 1.5 kg)
- 2 tablespoons peanut oil (or vegetable oil)
- 1 tablespoon white vinegar
- 1 teaspoon ground ginger
- 1 teaspoon ground paprika
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper, to taste
- 2 medium onions, finely chopped
- 2 cloves garlic, minced
- 2 red or green chili peppers, deseeded and finely chopped
- 2 medium carrots, peeled and diced
- 2 large potatoes, peeled and sliced
- 2 tablespoons butter
- 2 bay leaves

Marinate the Chicken
In a large mixing bowl, combine the peanut oil, white vinegar, ground ginger, paprika, cumin, salt, and pepper. Mix thoroughly until well combined. Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover the bowl and let the chicken marinate for at least 40 minutes to allow the flavors to meld.

Prepare the Potatoes
While the chicken marinates, peel the potatoes and place them in a pot. Add enough water to cover the potatoes and bring to a boil. Boil the potatoes on high heat for about 20 minutes, or until they are tender when pierced with a fork. Once cooked, drain the water and set the potatoes aside.

Cook the Chicken
Preheat the oven to 200°C (390°F). Place the marinated chicken pieces on a baking sheet, ensuring they are spaced evenly. Roast the chicken in the preheated oven for approximately 55 minutes, turning the pieces halfway through cooking, until the internal temperature reaches 75°C (165°F) and the chicken is golden brown and cooked through.

While the chicken is roasting, heat the butter in a large skillet over medium-high heat. Add the chopped onions, minced garlic, diced carrots, and chopped chili peppers to the skillet. Sauté the mixture for about 5 minutes, or until the vegetables are tender and the onions are translucent.
