Paella (Spanish Saffron Rice Dish)

Ingredients

  • 2 cups Bomba or short-grain rice
  • 4 cups chicken broth
  • 1/2 teaspoon saffron threads
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound chicken thighs, cut into bite-sized pieces
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound mussels or clams, cleaned
  • 1/2 cup frozen peas
  • 1 lemon, cut into wedges
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Broth

    Warm the chicken broth in a saucepan and add the saffron threads. Let steep while preparing the other ingredients.

  2. Cook the Chicken and Vegetables

    Heat olive oil in a large paella pan or wide skillet over medium heat. Add chicken pieces and cook until browned on all sides. Remove and set aside. In the same pan, sauté onion, bell pepper, and garlic until softened. Stir in smoked paprika, salt, and pepper.

  3. Add Rice and Broth

    Add the rice to the pan, stirring to coat it with the oil and vegetables. Pour in the saffron-infused chicken broth and return the chicken to the pan. Spread everything evenly and simmer over medium-low heat without stirring for about 15 minutes, allowing the rice to absorb the flavors.

  4. Add Seafood and Peas

    Nestle the shrimp, mussels, and peas into the rice. Cover loosely with foil or a lid and cook for another 10–12 minutes, until the seafood is cooked and the rice is tender. Discard any mussels that do not open.

  5. Serve

    Remove from heat and let the paella rest for 5 minutes before serving. Garnish with chopped parsley and lemon wedges.
