Accra (Caribbean Saltfish Fritters)

Ingredients

  • 1 cup salted codfish (saltfish), soaked overnight and flaked
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 small onion, finely chopped
  • 1-2 Scotch bonnet peppers, finely chopped (optional for heat)
  • 2 scallions, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup water (adjust as needed)
  • 1 large egg
  • Vegetable oil for frying

Instructions

  1. Prepare the Saltfish

    Soak the salted codfish overnight in water, changing the water at least once to remove excess salt. Boil the saltfish for 10 minutes, drain, and flake into small pieces, removing any bones.

  2. Make the Batter

    In a large bowl, combine flour, baking powder, chopped onion, Scotch bonnet pepper, scallions, thyme, black pepper, and paprika. Stir in the flaked saltfish. Beat the egg and add to the mixture, then gradually add water to form a thick but pourable batter.

  3. Fry the Fritters

    Heat vegetable oil in a deep skillet or frying pan over medium heat. Drop spoonfuls of batter into the hot oil, flattening slightly with the back of a spoon. Fry in batches until golden brown and crispy on all sides, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.

  4. Serve

    Serve Accra hot as a snack or appetizer, accompanied by spicy dipping sauce, ketchup, or a fresh salad.
