Zrazy is a traditional Eastern European dish, especially popular in Poland, Ukraine, and Belarus. Ingredients:

For the Meat Rolls:

1.1 lb (500 g) beef (sirloin or top round), thinly sliced

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon mustard (optional)

2 tablespoons vegetable oil for frying

For the Filling:

½ lb (250 g) mushrooms, finely chopped

1 medium onion (0.2 lb / 100 g), diced

1 hard-boiled egg, chopped

1 tablespoon butter

1 tablespoon breadcrumbs

½ teaspoon salt

½ teaspoon black pepper

For the Sauce (Optional):

1 cup (240 ml) beef broth

½ cup (120 ml) heavy cream

1 tablespoon flour (to thicken)

Instructions:

Step 1: Prepare the Filling In a pan, melt the butter over medium heat. Add the chopped onions and sauté until golden brown. Add the mushrooms and cook until soft and all moisture evaporates. Stir in the breadcrumbs, chopped egg, salt, and pepper. Mix well and set aside to cool.

Step 2: Prepare the Meat Pound each beef slice with a meat mallet until about ¼ inch (0.5 cm) thick. Lightly season with salt and pepper, and spread a thin layer of mustard if using. Place a spoonful of the prepared filling onto each slice of meat and roll it tightly, securing with toothpicks or kitchen twine.

Step 3: Cook the Zrazy Heat the vegetable oil in a large pan over medium heat. Sear the meat rolls until browned on all sides, about 5 minutes. Reduce the heat, cover, and cook for an additional 15–20 minutes, turning occasionally. If making the sauce, remove the rolls and set them aside. Stir the flour into the pan drippings, then gradually add beef broth and heavy cream, stirring continuously until thickened.

Serving: Serve Zrazy hot with mashed potatoes, buckwheat, or steamed vegetables. Drizzle with the prepared sauce for extra flavor.
