Zeamă (Romanian Chicken Soup)

Ingredients

  • 1 whole chicken (about 3–4 lbs), cut into pieces
  • 2 carrots, peeled and sliced
  • 1 celery stalk, sliced
  • 1 parsnip, peeled and sliced (optional)
  • 1 onion, peeled and halved
  • 1 leek, cleaned and sliced
  • 2–3 tablespoons vegetable oil
  • 1.5 liters (6 cups) water
  • 2–3 tablespoons rice or small pasta (optional)
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh lovage or parsley, chopped (for garnish)

Instructions

  1. Prepare the Broth

    Heat vegetable oil in a large pot over medium heat. Add the onion and sauté until golden. Add chicken pieces and lightly brown them.

  2. Add Vegetables and Simmer

    Pour in water, then add carrots, celery, parsnip, and leek. Season with salt and pepper. Bring to a boil, then reduce heat and simmer gently for 1–1.5 hours, skimming foam as needed, until the chicken is tender.

  3. Optional: Add Rice or Pasta

    If using rice or small pasta, add it to the soup about 15 minutes before the end of cooking. Stir occasionally to prevent sticking.

  4. Finish with Lemon

    Remove the chicken and vegetables if you prefer a clear broth. Add lemon juice to taste. Adjust seasoning with salt and pepper.

  5. Serve

    Serve Zeamă hot, garnished with chopped fresh lovage or parsley. Pair with crusty bread for a complete meal.
