Ingredients:
2 lbs turkey pieces (legs, thighs, or breast)
1 lb tomatoes, chopped
1 lb tomatillos, husked and chopped
1 lb potatoes, peeled and diced
1 lb carrots, peeled and sliced
1 onion, chopped
3 cloves garlic, minced
2 tablespoons achiote paste
1 tablespoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
4 cups chicken broth
2 cups water
Salt and pepper to taste
Fresh cilantro, chopped, for garnish
Instructions:
In a large pot or Dutch oven, combine the turkey pieces, chopped tomatoes, tomatillos, onion, garlic, achiote paste, oregano, cumin, coriander, chicken broth, and water. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let the soup simmer for about 1 hour, or until the turkey is tender. After the turkey is cooked, remove it from the pot and shred the meat using two forks. Return the shredded turkey to the pot and add the diced potatoes and sliced carrots. Continue to simmer the soup for another 20-30 minutes, or until the vegetables are tender. Season the Kak'ik with salt and pepper to taste. Serve the Kak'ik hot, garnished with chopped fresh cilantro.
