Ingredients

  • 1/4 cup palm oil (or vegetable oil)
  • 1 large onion, finely chopped

  • 1 inch ginger, minced
  • 2 cups chopped spinach or cocoyam leaves
  • 1 cup chopped kale or other leafy greens (optional)
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup ground crayfish or shrimp powder (optional)
  • 1-2 tablespoons groundnut (peanut) butter
  • 1-2 cups protein of choice (smoked fish, beef, chicken, or tofu)
  • 1-2 Scotch bonnet peppers, finely chopped (adjust to taste)
  • Salt and pepper, to taste
  • 2 cups water or stock

Instructions

  1. Prepare the Base

    Heat palm oil in a large pot over medium heat. Add chopped onions, garlic, and ginger. Sauté until fragrant and translucent.

  2. Add Vegetables and Protein

    Stir in the chopped spinach and kale, cooking until wilted. Add diced tomatoes, crayfish (if using), and your protein of choice. Mix well.

  3. Incorporate Flavors

    Stir in the groundnut butter and peppers. Pour in water or stock, reduce heat, and simmer for 15–20 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

    Cook until the sauce thickens slightly and the ingredients are tender. Adjust seasoning as needed.
