Tikvenik
Tikvenik is a traditional Bulgarian dessert made with flaky phyllo dough and a sweet pumpkin filling. Often prepared during autumn and winter, this comforting dish is a festive favorite. Ingredients
Pumpkin Filling
- 2 lb (1 kg) grated pumpkin
- 1 cup (200 g) granulated sugar
- 1/2 cup (75 g) chopped walnuts
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup (60 ml) vegetable oil or melted butter
Phyllo Dough
- 12-15 sheets of phyllo pastry
- 1/2 cup (120 ml) vegetable oil or melted butter (for brushing)

- Powdered sugar (for dusting)

Prepare the Pumpkin Filling
In a large bowl, combine the grated pumpkin, sugar, chopped walnuts, cinnamon, and nutmeg. Mix well to ensure even distribution of spices and sweetness.

Preheat the Oven
Set your oven to 350°F (175°C) and grease a large baking dish.

Assemble the Tikvenik
Lay a sheet of phyllo dough on a flat surface and lightly brush it with oil or melted butter. Spread a thin layer of the pumpkin filling evenly over the phyllo sheet. Roll the phyllo sheet tightly into a log and place it in the prepared baking dish. Repeat with the remaining sheets and filling, arranging the rolls side by side.

Brush the top of the assembled rolls with additional oil or melted butter. Bake for 30-35 minutes or until golden brown and crispy.

Allow the Tikvenik to cool slightly before dusting with powdered sugar for a festive touch.
