Ingredients
- 2 pounds ripe guavas
- 2 cups sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
Instructions
-
Prepare the Guavas
Wash the guavas thoroughly and cut them into quarters. Remove the seeds and any blemishes.
-
Cook the Guavas
Place the guava quarters in a large pot and add just enough water to cover the bottom. Cook over medium heat until the guavas are soft, about 10–15 minutes.
-
Make the Guava Pulp
Pass the cooked guavas through a fine mesh sieve or blend them until smooth to create a pulp.
-
Cook with Sugar
Return the guava pulp to the pot and add sugar, lemon juice, and salt. Cook over low heat, stirring constantly to prevent sticking. Continue cooking until the mixture thickens and starts to pull away from the sides of the pan, about 45–60 minutes.
-
Set the Guava Cheese
Pour the thickened guava mixture into a greased or lined dish. Smooth the surface and allow it to cool to room temperature. Refrigerate for several hours or overnight until firm.
-
Serve
Cut the guava cheese into squares or slices. Serve as a dessert, snack, or with cheese and crackers for a tropical twist.
