Štruklji (Slovenian Rolled Dumplings)

Ingredients

For the Dough:
  • 2 cups all-purpose flour

  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)
For Cooking:
  • 2 tablespoons butter, melted
  • 1 tablespoon breadcrumbs (optional, for baked version)

Instructions

  1. Prepare the Dough

    In a large bowl, combine flour and salt. Add the egg and water gradually, mixing until a smooth, elastic dough forms. Knead for about 5-7 minutes, then cover and let rest for 20-30 minutes.

  2. Make the Filling

    In a medium bowl, mix cottage cheese, sugar, egg, vanilla extract, and lemon zest until smooth and creamy. Adjust sweetness to taste.

  3. Assemble the Štruklji

    Roll out the rested dough on a floured surface into a thin rectangle, about 1/8 inch thick. Spread the filling evenly over the dough, leaving a small border around the edges. Carefully roll the dough into a tight log. Pinch the edges to seal.

  4. Cook the Štruklji

    Boiled version: Bring a large pot of salted water to a gentle boil. Carefully place the rolled Štruklji in the water and cook for 20-25 minutes. Remove and let cool slightly.

    Baked version: Preheat oven to 350°F (175°C). Place the rolled Štruklji in a greased baking dish, sprinkle with breadcrumbs if desired, and brush with melted butter. Bake for 25-30 minutes, or until golden brown.

  5. Serve

    Slice the Štruklji into 1-inch pieces and serve warm. They can be enjoyed as a dessert, snack, or even a side dish. Drizzle with extra melted butter or a light dusting of powdered sugar for added flavor.
