Experience the sweet, nutty flavors of Slovenian cuisine with Potica, a traditional rolled pastry filled with a rich walnut mixture. Perfect for holidays, special occasions, or a cozy tea time, Potica delights with its tender dough and flavorful filling, making it a cherished centerpiece on any table.

Ingredients

For the Dough:
  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 cup warm milk
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the Walnut Filling:
  • 2 cups ground walnuts
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Optional: 1/4 cup rum or brandy for flavor

Instructions

  1. Prepare the Dough

In a small bowl, dissolve the yeast in warm milk with a teaspoon of sugar. Let it sit for 5–10 minutes until frothy.

In a large bowl, combine flour, sugar, and salt. Add eggs, softened butter, vanilla extract, and the yeast mixture. Knead the dough until smooth and elastic, about 8–10 minutes. Cover the dough and let it rise in a warm place for 1–2 hours, until doubled in size.

  2. Prepare the Filling

In a small saucepan, combine milk and butter and heat until warm. In a mixing bowl, combine ground walnuts, sugar, vanilla, lemon zest, and optional rum. Gradually add warm milk and butter mixture to form a spreadable filling.

  3. Assemble the Potica

Preheat the oven to 350°F (175°C). Roll the dough on a floured surface into a thin rectangle, about 12x18 inches. Spread the walnut filling evenly over the dough, leaving a small border along the edges. Roll the dough tightly from the long side, forming a log. Pinch the ends to seal. Place the roll into a greased baking pan or form it into a spiral in a round pan.

  4. Bake

Bake for 45–60 minutes, until golden brown. If the top browns too quickly, cover with foil. Remove from oven and let cool completely before slicing.

  5. Serve

Slice Potica and serve as a sweet treat with coffee or tea. Its tender dough and rich walnut filling make it a perfect dessert or festive addition to holiday celebrations.

Serving

Potica embodies the warmth and tradition of Slovenian baking, offering a deliciously nutty experience in every bite.
