Ingredients

  • 1 pound saltfish (salted cod)
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tomatoes, chopped
  • 2 sprigs fresh thyme
  • 1 Scotch bonnet pepper (optional, whole or chopped for heat)
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup water or coconut milk
  • 2 scallions, chopped
  • 1 medium potato, diced (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Saltfish

    Rinse the saltfish under cold water and soak in water for 4–6 hours or overnight to remove excess salt. Drain and pat dry. Boil the saltfish in fresh water for 15–20 minutes until tender. Drain, remove bones and skin, and flake into bite-sized pieces.

  2. Cook the Vegetables

    Heat vegetable oil in a large skillet over medium heat. Add onions, garlic, and bell pepper, sautéing until softened and fragrant. Stir in the tomatoes, thyme, and Scotch bonnet pepper. Cook for 3–5 minutes until the tomatoes break down.

  3. Combine Saltfish and Simmer

    Add the flaked saltfish to the skillet, along with black pepper, paprika, and diced potato if using. Pour in water or coconut milk, stirring gently to combine. Cover and simmer over low heat for 20–25 minutes, allowing the flavors to meld and the sauce to thicken.

  4. Serve

    Remove from heat and stir in chopped scallions. Garnish with fresh parsley. Serve hot with traditional sides like fried dumplings, boiled green bananas, or rice and peas for a complete Caribbean experience.
