Sopa de Mbaipy (Paraguayan Pumpkin Soup)

Ingredients

  • 2 cups mbaipy (pumpkin), peeled and diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, peeled and diced
  • 1 small potato, peeled and diced
  • 1/2 cup corn kernels (fresh or frozen)
  • 200 g beef or chicken, cut into small cubes
  • 4 cups chicken or vegetable broth
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped, for garnish

Instructions

  1. Prepare the Ingredients

    Heat vegetable oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until fragrant and translucent. Add the diced meat and cook until lightly browned on all sides.
