Socca (Chickpea Flatbread)

Ingredients

  • 1 cup chickpea flour
  • 1 cup water
  • 3 tablespoons olive oil, plus extra for the pan
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper, plus more for serving
  • Optional: 1/2 teaspoon dried rosemary or fresh thyme

Instructions

  1. Prepare the Batter

    In a bowl, whisk together chickpea flour, water, olive oil, and salt until smooth. Let the batter rest at room temperature for at least 30 minutes, allowing the flour to fully hydrate.

  2. Preheat the Oven

    Preheat your oven to 450°F (230°C). Place a 10–12 inch ovenproof skillet or cast-iron pan in the oven to heat.

  3. Cook the Socca

    Carefully remove the hot skillet from the oven and brush it generously with olive oil. Pour in the batter, spreading it evenly. Return the skillet to the oven and bake for 10–15 minutes, until the edges are golden and crispy. For extra crispiness, broil for an additional 2–3 minutes.

  4. Season and Serve

    Remove the Socca from the oven and sprinkle with black pepper and optional herbs. Slice into wedges and serve immediately while warm and crispy.

Serving

Socca is delicious on its own, with a drizzle of olive oil, or served alongside a fresh salad or charcuterie. Pair it with a glass of crisp white wine for a true Mediterranean experience.
