- 2 cups long-grain rice
- 1 lb (450 g) beef, chicken, or goat, cut into bite-sized pieces
- 1 large onion, chopped

- 1 bell pepper, chopped
- 2 medium tomatoes, chopped (or 1 cup canned tomatoes)
- 2 tablespoons tomato paste
- 1–2 cups beef or chicken broth
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- 2–3 tablespoons vegetable oil
- Salt and pepper to taste
- Optional: hot chili pepper to taste
- Fresh parsley or cilantro for garnish

Prepare the Meat
Heat vegetable oil in a large pot over medium-high heat. Add meat and brown on all sides. Remove and set aside.

In the same pot, sauté onions, garlic, and bell pepper until soft and fragrant. Stir in tomato paste and cook 2–3 minutes to deepen the flavor.

Add chopped tomatoes, curry powder, thyme, paprika, salt, and pepper. Stir well and cook for 5–7 minutes until tomatoes soften and form a rich sauce.

Return the meat to the pot. Add rice and enough broth to cover the rice by about 1 inch. Bring to a boil, then reduce heat, cover, and simmer for 20–25 minutes until rice is tender and liquid is absorbed. Stir occasionally to prevent sticking.
