2 eggs, beaten (for coating)
2 tablespoons oil (for frying)
For the Potatoes:
2 medium potatoes, peeled and sliced (0.7 lbs or 0.32 kg)

For the Rice:
1 cup (0.5 lbs or 0.23 kg) white rice
2 cups (0.48 L) water
½ teaspoon salt
For the Salsa:
2 medium tomatoes, finely diced (0.6 lbs or 0.27 kg)
1 small onion, finely diced (0.2 lbs or 0.1 kg)
1 tablespoon fresh cilantro, chopped
Juice of 1 lime
Salt to taste

Instructions:
Step 1: Prepare the Rice Rinse the rice under cold water. In a pot, bring 2 cups of water and ½ teaspoon of salt to a boil. Add the rice, reduce the heat to low, cover, and let it cook for 15-20 minutes, or until tender.
Step 2: Fry the Potatoes Heat oil in a frying pan over medium heat. Fry the potato slices until golden and crispy on both sides. Drain on paper towels and sprinkle with salt.
Step 3: Prepare the Beef Pound the beef thinly between two sheets of plastic wrap until it’s very thin and evenly flattened. Season the breadcrumbs with paprika, garlic powder, salt, and black pepper. Dip each piece of beef into the beaten eggs, then coat with the seasoned breadcrumbs. Heat oil in a large skillet over medium-high heat. Fry the breaded beef until golden brown on both sides. Remove and drain on paper towels.
Step 4: Make the Salsa In a bowl, combine diced tomatoes, onions, cilantro, lime juice, and salt. Mix well and set aside.
Step 5: Fry the Eggs In the same skillet, fry the eggs sunny-side up until the whites are set and the yolks remain runny.
