1 tbsp berbere spice mix

1 tsp ground ginger

3 cups (710 ml) water or vegetable broth

Salt, to taste

1 small tomato, chopped (optional)

1-2 green chili peppers, chopped (optional)

Instructions

Prepare the Base: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes. Add the minced garlic and cook for another minute.

Add the Spices: Stir in the berbere spice mix and ground ginger, cooking for 1-2 minutes until the spices are fragrant.

Cook the Shiro: Gradually add the shiro powder to the pot, stirring constantly to prevent lumps. Pour in the water or vegetable broth slowly, continuing to stir. Bring the mixture to a simmer.

Simmer and Thicken: Lower the heat and let the stew simmer, stirring occasionally, for about 15-20 minutes. If you’re using tomatoes or green chili peppers, add them halfway through the cooking process. The stew should thicken to a smooth consistency add more water if it becomes too thick.

Season and Adjust: Taste the Shiro and add salt as needed. Adjust the thickness by adding more water or broth if necessary. Let it simmer for a few more minutes to let the flavors meld together.
