Ful Medames, commonly known as Ful, is a classic Egyptian breakfast dish made from fava beans. It is rich in flavor and nutrients, making it a perfect start to the day. Ingredients:

2 cups dried fava beans (1 lb / 0.45 kg)

1/4 cup olive oil (0.06 l)

4 cloves garlic, minced

1 large onion, finely chopped

1 large tomato, chopped

1 tsp ground cumin (0.002 kg)

1/2 tsp paprika (0.001 kg)

1/4 cup lemon juice (0.06 l)

Salt and pepper to taste

Optional toppings: chopped parsley, diced tomatoes, chopped onions, crumbled feta cheese, hard-boiled eggs

Instructions:

Soak the Beans:

Rinse the dried fava beans and place them in a large bowl. Cover with water and let them soak overnight.

Cook the Beans:

Drain and rinse the soaked fava beans. Place them in a large pot and cover with fresh water. Bring to a boil, then reduce the heat to low and simmer for about 1.5 to 2 hours, until the beans are very tender.

Prepare the Base:

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is soft and translucent, about 5 minutes.

Combine Ingredients:

Add the chopped tomato to the skillet and cook for another 5 minutes, until the tomato is soft. Stir in the cumin and paprika, cooking for an additional minute.

Mash the Beans:

Once the fava beans are cooked, drain any excess water and add the beans to the skillet. Use a potato masher or the back of a spoon to mash the beans to your desired consistency. Some prefer a smooth texture, while others like it chunky.

Season and Simmer:

Stir in the lemon juice, salt, and pepper. Let the mixture simmer for another 10 minutes to allow the flavors to meld together.

Serving:

Serve Ful hot, garnished with your choice of toppings such as chopped parsley, diced tomatoes, chopped onions, crumbled feta cheese, or sliced hard-boiled eggs. Accompany with warm pita bread or crusty bread for dipping.
